The guajillo chile is one of the best known varieties of chile in Mexico, due to its use in pre-Hispanic cultures was important and was part of the staple food in addition to corn, beans and sweet potato. Its flavor is not so spicy and is somewhat fruity. It is called guajillo chile because of its dark and wrinkled skin (like a raisin) when dried.
