The ate is a fruit paste, mainly quince, which is made from the pulp of any fruit, which is pureed and then cooked with sugar or piloncillo, until it thickens and thus obtains a paste that can be mold or place in containers. This paste can be kept for one to two years, although over time it tends to darken and shrink slightly.
