The artichoke is a plant typical of temperate zones, such as the Mediterranean, as it does not tolerate humidity or very low temperatures. A good artichoke is round and compact, light green and very bright.

From its plant everything is usable, from the very green leaves due to its exposure to the sun, which are born in the stems, to the artichoke itself that is born in the lateral branches whose flower is at the perfect moment for its consumption, even if it is not completely ripe. The edible part is a rosette, its outer leaves are hard while the inner leaves, which form the heart, are much more tender and tasty.

This plant is generally used in some northern and central Mexican states, where the main medicinal application is to treat biliary problems, gallstones and diabetes.
